It has been more than a hundred years since we set up a shop in Nishijin, a town where you can hear the sound of weaving. We have made pickles that are indispensable for the days of Kyoto people. One of our commitments is to choose fresh domestic vegetables, mainly from Kyoto, and to add subtle salt to make use of the taste, aroma, and texture of fresh vegetables. A creative pickles made by adding large leaves to lightly salted Chinese cabbage, carrots, and ginger, wrapped in Chinese cabbage, pickled in soy sauce dashi, wrapped in kelp, wrapped in Mibuna, and wrapped in kelp. "Kyo soy sauce-zuke Nishijin-zuke" is handmade by sticking to raw materials from Japan and Kyoto Prefecture and checking salt-pressing work (salt-zuke). A specialty pickles made by skilled craftsmen who bring out the chewy, flavor, and the taste of fermentation. There are five types of cucumber shiba-zuke, blue shiba-zuke, Kyoto Mibu-nazuke, Kyoto Komatsu-nazuke, Kyoto-nazuke, and Kyo-nashiba-zuke. Kyoto Soy Sauce Kozai Jinzuke 120g for 540 yen each.

The specialty cucumber shiba pickles are sold in barrels. It has been salted for more than three months, fermented cucumbers, eggplants, ginger, and redshiso are added to soy sauce dashi, and they are reputed to have a different flavor because it does not heat sterilization. A shallow pickles made with fresh and delicious domestic yam, pickled with wasabi stems. It has a firm chewy texture and a crisp spicy taste of wasabi. 170g wasabi taste recommended for alcoholic beverages 648 yen. In spring, yam plum shiso flavor is also available for a limited time.
